Polenta with Sun Dried Tomatoes and Mozzarella

This vegetarian dish was easy to make, unusual, and a hit with my visitors. Spice it up by putting chilli powder if you like your food hot!

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 4

600 ml vegetable stock (I used home made)
125 g polenta
1 tsp cayenne pepper, or to taste
25 g butter
2 tbsp finely sliced sun dried tomatoes
1 shallot
125 g mozzarella, thinly sliced

Boil the stock with the mixed herbs (or herb of your choice) and then slowly pour in the polenta, stirring while, or as soon as this is done.

Turn the heat down and simmer for a few minutes until the polenta is cooked - about 5 - 10 minutes. Keep an eye on it, and stir regularly so it does not stick.

Add the cayenne, some salt and pepper and then the butter.


Pour it into an ovenproof dish, smooth the top as best you can, and let it cool.

An oblong dish would work well

Cut it into four squares, or more depending on how deep you have made it.

When you are almost ready to eat, turn on your grill and put the sun dried tomatoes on top of the polenta.


Add some of the sliced shallot, and then the mozzarella on each square.


Grill for about 3 - 5 minutes or until the cheese is melted. Serve.

Also great heated up in the microwave up to a week later, or cut into smaller square for party food - hot or cold.

I served it with my chicken and walnuts recipe and garnished it with more shallot slices.
