Polish food is enjoying a fast growing popularity around the world, and there are several different versions of a Polish Mazurek or Mazurka cake, and this is one my mother used to make.
The texture is between shortbread, and a cake, and I have altered it as I use coconut sugar, where Mum would have used white, refined castor sugar.
You can also vary the amount of apple and I have used more than her original version.
This is also a good way to use up egg yolks which I often have left over.
This cake can be served warm, hot, or cold and is delicious with thick cream.
Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 8 servings
Ingredients
225 g plain flour
2 tsp baking powder
Pinch of salt
100 g coconut sugar
Grated zest and juice of an orange
175 g butter
2 egg yolks
3 tbsp thickened cream
FOR THE TOPPING
300 - 500 g apples, peeled, cored, and sliced
70 g castor sugar
A few flaked almonds (optional)
Method
Preheat the oven to 180° fan forced.
Sift the flour and baking powder in a bowl. Add the salt, sugar and orange zest.
Add the butter and rub in with your fingers until the mixture resembles crumbs.
Beat the egg yolks and cream together.
Stir this into the the flour mixture and mix to make a crumbly dough.
Press into the base of a lightly oiled 26 x 16 cm rectangular tin or dish, pushing it up a bit around the edges.
Prick the base and bake for no longer than 20 minutes.
Remove the cake from the oven.
Mix the sliced apples, caster sugar and juice of half of the orange, and then put the apple slices over the dough.
Bake for a further 20 minutes or until the apple is tender but not mushy.
Cut into slices when slightly cooled.
Add cream for an even better taste!
