Pollo Principessa on a Budget

I always order this 'main' when I dine at my favourite Italian restaurant. However, eating out is a luxury I can only afford after pay day. In a bid to save money I've recreated the dish at home with frozen chicken thighs and cheap wine. You can enjoy the flavours and opulence of a restaurant, while in your pyjamas.

Preparation Time: 8 hours/Overnight
Cooking Time: 45 minutes
Makes: 2 servings

2 Chicken thighs
Vegetable Stock
Fresh Thyme
Fresh Basil
2 Garlic Cloves
Sea Salt
Black Peppercorns
Black Pepper
50ml Double Cream
Half a small glass of White Wine

Place the chicken in a bowl/tub, large enough to marinade.

Add the seasoning.


Basil and Black Peppercorns

Crush the garlic using the flat blade and add.

Pour in vegetable stock about halfway up the bowl/tub.

Place in the fridge for about 5/6hours - until the chicken has defrosted.

After 5/6 hours place the chicken in a saucepan along with the stock and let it simmer for at least 30 minutes on a low heat.

Add the cream, salt, black pepper (ground) and wine to the simmering dish and cook for a further 15 minutes.

You may want to make a roue to thicken the sauce which is an equal portion of flour to butter, mixed together, and added once smooth.

Serve with either rice, potatoes, or salad.
