Pomegranate and Festive Fruit Rice Salad

This is a fragrant and delicious way to use up some leftover rice. It works well with wild rice. The infused fruit and orange juice gives it a festive flavour, but it's also fresh and light for warm day.



Preparation Time: 10 minutes
Cooking Time: 30 minutes (if you are cooking the rice)
Makes: 4 servings

Ingredients
Rice (1/2 a cup of uncooked rice per person, 1 cup of cooked rice per person)
100g pomegranate seeds
3 spring onions
3 tablespoons mayonnaise
2 tablespoons white wine vinegar
2 tablespoons freshly squeezed orange juice
Salt
Freshly ground black pepper
1 cup spice-infused dried fruit

Method
  • Cook the rice according to the packet instructions and then leave to cool.



  • Add the spice-infused fruit and the pomegranate seeds to the rice and mix well.
  • Finely chop the spring onion and add them to the rice mixture.



  • In a separate bowl, mix the mayonnaise with the orange juice and the white wine vinegar, whisk it thoroughly to combine. Add salt and pepper to taste.



  • Add the dressing to the rice and fruit and mix well.
