Poppy Seed Cake with a Lemon Topping

My ever so slightly modified take on the recipe from Love Bake Nourish cook book. This is a light and delicious cake and I always serve it after a Sunday lunch.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Makes: 8 servings

3 eggs
180g butter
180g spelt flour
100g honey
25g brown sugar
1 level tsp poppy seeds
Tblsp cinnamon
Tblsp baking powder
Half a vanilla pod
50g yogurt
50g icing sugar
2 Lemons

Place the butter in a food processor and mix until pale and fluffy.

Add three tablespoons of flour to the mixture along with the eggs, beating after each.

Add the rest of the flour, cinnamon, sugar and honey and process until a cake batter forms.

Add the poppy seeds and combine using a spoon.

Pour the cake mixture into a greased and lined cake tin and place in the oven for 35 minutes at 180 degrees/gas mark 4.

Remove from the oven and allow to cool completely before icing.

Pour icing sugar and yogurt into a bowl along with the juice of half a lemon.

Split the vanilla pod using a knife and scrape into the yogurt mix.

Whisk the cream mixture until smooth then, using a palette/flat and wide knife, spread on top of the cake.

Grate less than half of the lemon on top, and serve.

Sorry Choco, 1 level tsp poppy seeds, 50g yogurt, 50g icing sugar. Cinnamon added with the final lot of the flour and remaining ingredients to form a batter.
Missing quantities for poppy seeds, yogurt, icing sugar? Cinnamon is added when or not at all?
