Pork Cabbage Cider Hot Pot
This hearty yet mellow hot pot is the perfect dish to slow cook on a winter afternoon, in the warmth of your kitchen whilst listening to the radio. Given it's lean meat and vegetable base, it is low in fat, but the addition of cider gives it a naughty, tasty feel. For extra decadence, finish off the rest of the cider whilst you tuck in.
Preparation Time: 20 minutes
Cooking Time: 1.5 - 2hrs
Makes: 4 servings
Ingredients
350g tenderloin pork fillets with all fat removed
1 large onion
1/2 a small savoy cabbage
2 or 3 large floury potatoes
3 carrots
1tbps plain flour
100ml dry cider
400ml chicken stock
3-4 sprigs fresh thyme
Low calorie cooking / oil spray
Salt and Pepper
Method
Preheat the oven to 160 degrees C / gas mark 3.
Chop the pork into bite-sized chunks.
Chop the carrots into rough pennies.
Chop the onion into chunks.
Thickly slice the cabbage.
Peel the potatoes and chop into thick slices.
Spray low calorie oil spray into a casserole dish / heat proof dish and place over a medium-high heat.
Add the pork and lightly brown for 5 minutes or so until all the meat is sealed.
Put the pork to one side on a plate, keeping it warm
Next add more cooking spray to the dish, turn the heat down, add the onions and cook gently for 10 minutes or so until softened and golden brown
Add the carrots and cook for a further minute.
Add any extra cooking spray if the vegetables start to stick, then add a small amount (less than a teaspoon of plain flour) to soak up the juice.
Add the cider and stock and stir.
Add the cabbage and pork.
Sprinkle over the fresh thyme.
Place the sliced potatoes over the top, placing them neatly so that they overlap.
Spray more low calorie oil spray on top of the potatoes, cover and place in the oven on the top shelf.
Cook for an hour, then remove the cover.
Cook for a further 30-45minutes, or until the potatoes on top have turned golden brown.
Serve and enjoy.
