Port Berry Macadamia Crumble

These easy, no fail, luscious port berries are delicious with a macadamia crumble. They are my go to dessert if we are having friends over or if I need comfort food. Make in individual ramekins or in a pie dish. They are low FODMAP, gluten and lactose free. Serve alone, with cream, custard or icecream.

Serves: 6
Ingredients
For the port berry mixture
500g frozen strawberries
300g frozen blueberries
200g frozen raspberries
300ml port
3/4 cups sugar
1 lemon, finely grated rind and juiced
1 tsp cinnamon
For the macadamia crumble
2 1/2 cups macadamias
75g butter or margarine (use nuttelex if lactose free)
1/4 cup caster or raw sugar
Method
Preheat oven to 200 degrees.
For the port berry mixture
Put the strawberries, blueberries, raspberries, port, sugar, cinnamon, 1 tbsp of lemon rind and 1 tbsp of the lemon juice in a frypan on high heat. Bring to the boil, stirring to combine until the sugar dissolves.
Turn the frypan down and simmer for 20-25 minutes until the fluid has reduced by half. Add more lemon juice to taste, if required. Turn off heat and set aside.

For the macadamia crumble mixture
In the meantime, while the port berry mixture is reducing, lightly roast the macadamias on a frypan on high for 3-4 minutes until golden. Set aside to cool.
Put macadamias in a blender and pulse until a rough crumb is formed. Take care not to over blend as the macadamias will turn into a wet paste. Transfer into a bowl and use your fingertips to massage the butter into the crumbs.
Add the sugar into the crumb and stir to combine. Set aside.

Assembling the port berry macadamia crumble
Spoon the port berry mixture into 6 ramekins or a pie dish lined with baking paper. Evenly sprinkle the macadamia crumb over the port berry mixture.

Bake in the oven for 20-25 minutes, until the macadamia crumb is golden.
Serve alone, with custard, cream or ice cream.

Tips
Substitute the frozen strawberries, blueberries and raspberries with 500g frozen mixed berries, 300g strawberries and 2 diced Granny Smith apples. Cook the apples in a frypan with 1 tbsp of water for 4 minutes before adding the berries. Please note that blackberries and apple are not low FODMAP.
