Portuguese Walnut Pudding

For this dessert, the Portuguese kindly accommodate anyone with a gluten intolerance by making a flourless pudding. On the other hand, they made it completely inedible for people with nut allergies, but you can't please everyone. I wish I knew more about the origins of this pudding (apart from it being Portuguese), but I could not find any information about it. I actually think it sounds more reminiscent of English steamed puddings than anything else, particularly since walnuts are a British grown nut. Whatever its history, I'm so glad I discovered Portuguese walnut pudding. It is extremely tasty and light, and uses just three ingredients. Based on the brands I used, each slice should be about 267 calories.

Preparation Time: 15 minutes
Cooking Time: 1hr 30 minutes
Makes: 8 servings

Ingredients
225g shelled walnuts
4 large eggs
100g Xylitol sweetener (or caster sugar if your prefer)

Method
  • Separate the eggs and beat the yolks with sugar.
  • Whisk the egg whites and fold into the yolks.
  • Ground the walnuts in a food processor and mix into the mixture.
  • Pout the mixture into a pudding bowl, and cover it up with either a muslin cloth or piece of tine foil.
  • Steam.
