Sausage rolls are often considered a kid's treat. jazzed up with the distinctive flavour of fennel seeds and rolled into a whirl, these become special enough to serve as an adult treat at a picnic or just for a snack. I tried these for the first time at a kid's birthday party as a snack that had been prepared for the grown ups. One bite and I knew I just had to have the recipe.
I recommend using really good quality sausages with a high meat content. I've used pork and leek sausages which are my favourite but you could try others. Why not see what your local butcher recommends?

Makes: 10 servings
Ingredients
Ready rolled puff pastry (20x30cm)
400g pork & leek sausages
1.5 tsp fennel seeds
Salt & freshly ground black pepper
1 beaten egg
Method
Snip the end of each sausage casing and squeeze out the meat onto the puff pastry. It might sound a bit fiddly but it's actually very quick and easy to do.
Spread out the sausage meat, leaving a gap of a couple of centimetres around the edge.
Sprinkle over the fennel seeds, salt and black pepper.
Brush the outer edges with egg.
Roll up the pastry from the short sides, halfway on both sides so that they meet in the middle.
As you are rolling, pause to brush on beaten egg as the pastry below becomes exposed.
Slice the double roll into roughly 3cm rounds. You should be able to get about 10 of these from the roll.
Place each piece on a baking tray, on their flat side.
Brush around the pastry with a little more egg.
Pop in the oven and cook for around 25 minutes or until golden brown and smelling delicious.
Great served hot or cold.
