Potato and Onion Stacks

If you're looking for a different way to serve roast potatoes, look no further! These are tasty stacks of delicious potato, onion and garlic.



Preparation Time: 10 minutes
Cooking Time: 55 minutes
Makes: 6 servings

Ingredients
1 tbsp vegetable oil
2 onions
400g potatoes
3 cloves of garlic
160ml chicken stock
50g low salt butter

Method
  • Preheat the oven to 160 Celsius.
  • Slice the onions thinly into rounds.



  • Heat the oil in a frying pan over a medium heat.
  • Gently fry the onion for 5 minutes
  • Slice the potatoes thinly into 2mm thick rounds. This is much easier with a mandolin or an automatic setting on a food processor, but can be done by hand.



  • Crush the cloves of garlic.
  • Grease the inside of individual ramekin dishes or a muffin pan.



  • Begin to layer the stacks: start with a few onion slices at the bottom of each stack.
  • Then add a layer of potato and some of the crushed garlic.



  • Keep layering the onion, potato, and garlic until each stack is full. Finish each stack with a layer of onion.
  • Pour a small amount of the chicken stock into each stack.
  • Melt the butter, and then brush it over the top of each stack.



  • Cover the top of each stack in foil, and then bake in the oven for 20 minutes.
  • After 20 minutes, remove the foil, turn the heat up by 20 degrees and bake for another 30 minutes.
