Potato and Salsa Bake
The inspiration for this recipe came from ordering the dish 'Patatas Bravas' whilst in Spain. The flavour of the hot tomato sauce complimented the soft potato texture really well. It made me wonder what potato and salsa sauce would taste like. I decided to make a bake out of it.

Cooking Time: 1 hour
Makes: 4 servings
Ingredients
2 large tomatoes
150g tinned tomato
60g grated cheese (e.g mozzarella or cheddar)
10 small potatoes
1 onion
2 mild green chillies
2 cloves garlic
40g Olives
Olive oil
1tsp crushed ginger
2tsp paprika powder
2tsp dried coriander powder
Salt
Fresh Parsley
Black pepper seasoning
Method
Wash and peel the potatoes. Place them in a cooking pan.
Add boiling water to the potatoes along with 1/2tsp salt. They should take 10-15 minutes to cook depending on the type of potatoes.
Salad potatoes work well with this recipe.
Whilst the potatoes are cooking, chop the tomatoes in to small pieces.
Add the fresh tomatoes and tinned tomatoes to a cooking pan and cook on a low heat.
Remove the seeds from the chilli and cut into small pieces. Add them to the tomatoes.
Add 3 wooden spoons full of olive oil to the tomatoes. Also add the paprika, dried coriander powder, crushed ginger and1tsp salt.
Smoked paprika seasoning was used.
Dice the onion and grate 2 cloves of garlic. Add them to the tomatoes and continue cooking for 20 minutes. The salsa sauce will need to be stirred regularly.
Grated garlic.
Use a fork to check whether the potatoes are cooked or not. Once cooked drain the water and allow the potatoes to cool for a few minutes.
Cut 2/3 of the potatoes into quarters.
Spread 1tsp of olive oil to the base of an oven proof dish. Line the potatoes and add some black pepper.
Cut in half some of the olives and add these to the potatoes.
Cover with the cooked salsa sauce,
Slice the remaining potatoes, cut in half the remaining olives and place on top of the salsa sauce.
Cover with a few chopped sprigs of parsley.
Cover with cheese. Cook in the oven at 180 degrees for 30 minutes or until the topping is golden brown. Serve and enjoy.
Why not try this recipe with some single cream in the salsa sauce. You can also add some sweet peppers, mushrooms or any other vegetable you like. You can make this dish as healthy as you wish!
