Potato and Spinach Curry
A hearty but un-spicy dish with plenty of fibre. This is a filling side dish or a nice main course
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4 servings
Ingredients
500g New Potatoes cut into evenly sized pieces
600g Spinach chopped
1 Onion finely chopped
1 Green birds eye chili, chopped and deseeded
3 cloves Garlic finely chopped
1/2 tsp Turmeric powder
1/2tsp Garam Masala
1/2 tub cottage cheese
Oil for frying
Salt
Pepper
Method
Par boil the potatoes while you chop the remaining veg.
When the potatoes are softened, drain.
Heat some oil in a wok and fry the potatoes until golden brown then remove and put to one side.
In the wok or frying pan heat some more oil and fry the onion until it starts to brown.
Add the garlic, chili and spinach to the wok with the onion.
Allow the spinach to wilt and add the spices - about 5 minutes.
Add the potato back to the pan, stir well and cook for a further 10 minutes.
Finally stir in the cottage cheese and allow to melt into the dish.
Serve with fresh coriander and extra cottage cheese on the side.
