Potato Cake Bake

An alternative version of the potato cakes traditionally cooked on a griddle, this makes for a substantial meal served with your choice of meat and veg.

Preparation Time: 20 minutes
Cooking Time: 35 minutes
Serves: 4-6

2 small baking potatoes (approx. 350g)
2 small brown onions
225g porridge oats
150g cheddar cheese
1 tsp ground parsley
1 tsp ground garlic

Spiralise one potato, and push it into the bottom of a 18cm cake tin.

Dice the onions and remaining potato, then puree them together in a food processor into mash.
Fry for 5 minutes.

Pre-heat the oven to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas.
Grate the cheese, and then stir it into the potato mash until it melts.
Stir in the parsley, garlic, and porridge oats.

Spoon the mixture into the cake tin and bake in the oven for 30 minutes.

Turn out the potato cake so the spiralled potato is on top.
