Potato Rosti With Lemon Cream Cheese and Smoked Salmon
I love the combination of smoked salmon, cream cheese and capers.
In this recipe those flavours are put together on top of the rosti or potato cakes.

Makes: 4 rosti
Ingredients
70 g [link http://reviewclue.com.au/double-blocks-of-philadelphia-cream-cheese/ Philadelphia cheese]
1 tblsp dill
Grated rind of a small lemon
350 g potatoes, peeled and grated
½ onion, grated
Bit of oil
60 g smoked salmon
Capers to taste
Lemon wedges, for garnish
Method
Mix the cream cheese, dill and lemon rind together and keep in fridge.
Mix the potato and onion and squeeze out the liquid -I do this with a tea towel.
Heat some oil in a frypan and cook this mixture for about 7 minutes, stirring occasionally.
This par cooks the potatoes
Put mixture in a bowl and allow to cool. Season with salt and pepper to taste, and form into 4 patties.
Heat some more oil in the same pan, and cook each rosti for about 3 - 4 minutes on each side.
Put the rosti on a serving plate with the smoked salmon and put a dollop of the cream on top of the rosti.
Add the capers and the lemon wedges, and any salad or whatever you want to serve it with.
As a main, each person would probably eat four rosti.
