Potato Salad With Bacon And Eggs
There are many ways to make potato salad -I actually had a similar one to this at my daughter in law's house and it was delicious, so I have made her recipe with the addition of crispy bacon.
Vegetarians of course, can leave out the bacon and it will still be a very tasty potato salad.
This is a very versatile dish as it can be eaten as a main meal with salad, or it can be eaten with a main meal as a salad!
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 6 servings
Ingredients
8 medium potatoes
1 or 2 rashers bacon, cut into small pieces
2 hard boiled eggs, chopped
¾ stick celery, finely chopped
1 spring onion, chopped
2 - 3 tbsp egg mayonnaise (good quality)
2 tsp pesto
2 tsp Dijon mustard
Parsley to taste, chopped finely
1 tbsp capers
Cornichons or dill cucumbers, chopped
Method
Cut the potatoes up and boil for about 10 - 15 minutes until cooked but still a bit firm.
Meanwhile cook the pieces of bacon until they are crispy.
Cut potatoes, leaving skin on if you like it, and add the mayo and pesto while potatoes are still hot.
Add the rest of the ingredients and salt and pepper to taste.
Mix carefully until all ingredients are well mixed, and serve either warm, from the fridge or at room temperature.
This will last for at least 4 days in the fridge, and can therefore be made ahead.
