Prawn Cocktail
A simple summer entrée, the prawn cocktail. I just love it. With prawns being expensive I like to add cherry tomatoes so it's a bit more filling.
Prawn cocktail ready to serve

Ingredients
16 cooked king prawns
1/2 punnet of cherry tomatoes
1 bunch of baby cos lettuce leaves
2 tablespoons tomato sauce
1/4 teaspoon tabasco sauce
2 tablespoons of whole egg mayonnaise
1 teaspoon of Worcestershire sauce
4 martini glasses to serve
Method
Wash and dry 10 lettuce leaves and cut each in half horizontally.
Place the 2 of the tops of the lettuce in each serving glass standing up.
Cut the remaining pieces of lettuce in half again, and place some of each into each glass.
Wash the cherry tomatoes and cut into halves placing about 6 halves one each glass.

Peel the prawns leaving only the tail.
Combine Worcestershire, tabasco, tomato sauce and mayonnaise in a bowl to make the cocktail sauce. Mix well and drizzle some over the salad.
Cocktail sauce should look like this
Hang 4 prawns over the side of each glass leaving the tail sticking out.
Pour some more cocktail sauce over the prawns.
Serve extra cocktail sauce on the side if desired.
