Prawn Cocktail

A simple summer entrée, the prawn cocktail. I just love it. With prawns being expensive I like to add cherry tomatoes so it's a bit more filling.

Prawn cocktail ready to serve


Preparation Time: 10 minutes

Makes: 4

Ingredients
16 cooked king prawns
1/2 punnet of cherry tomatoes
1 bunch of baby cos lettuce leaves
2 tablespoons tomato sauce
1/4 teaspoon tabasco sauce
2 tablespoons of whole egg mayonnaise
1 teaspoon of Worcestershire sauce
4 martini glasses to serve

Method
  • Wash and dry 10 lettuce leaves and cut each in half horizontally.
  • Place the 2 of the tops of the lettuce in each serving glass standing up.
  • Cut the remaining pieces of lettuce in half again, and place some of each into each glass.
  • Wash the cherry tomatoes and cut into halves placing about 6 halves one each glass.

  • Lettuce and cherry tomato go like this


  • Peel the prawns leaving only the tail.
  • Combine Worcestershire, tabasco, tomato sauce and mayonnaise in a bowl to make the cocktail sauce. Mix well and drizzle some over the salad.

  • Cocktail sauce should look like this


  • Hang 4 prawns over the side of each glass leaving the tail sticking out.
  • Pour some more cocktail sauce over the prawns.
  • Serve extra cocktail sauce on the side if desired.
