This prawn stir fry is so quick and easy to make, it is perfect for those nights when you can't be bothered to cook. and a lot healthier than getting a take away. Based on the brands I used, each serving should be about 337 calories.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
175g cooked prawns
175g bean sprouts
60g red bell pepper
50g spring onions
50g light margarine
50g cashew nuts
2 tsp lemon juice
2 tbsp mixed herbs
2 tbsp soy sauce
2 tbsp raspberry vinegar

Method



  • Chop the pepper and spring onions, then mix with the water chestnuts, bean sprouts, cashew nuts, and prawns.
  • Fry the mixture in margarine, and sprinkle the herbs.
  • Mix the lemon juice, soy sauce, and vinegar, the pour over the stir fry.
