Vegetable Slice

This is a great recipe to trick the kids into eating more vegetables! Such a simple and easy recipe, a fantastic "go-to" recipe for weeknight dinners.

Preparation Time: 15 minutes
Cooking Time: 25-30 minutes
Makes: approximately 5 servings (dependent on the size of the slices)

1 onion (grated)
2 carrots (grated)
1 zucchini (grated)
1 cup of cheese (grated)
4 eggs
1 cup of self raising flour
1/4 cup of vegetable oil
1 can of sweet corn kernels

Mix together the grated onion and corn.

Add the grated carrot.

Add the grated zucchini and mix.

Add the eggs, then mix well.

Stir in the oil.

Add the grated cheese and stir.

Add the flour and mix well, until there are no lumps in the mixture.

Grease a casserole dish.

Spread the mixture evenly into the pan and cook for 25-30minutes.

Serve as part of a main meal or cut a slice for a light lunch.
