Goat Cheese Risotto

This vegetarian risotto is a lovely and creamy family sized dish to serve at dinner. Based on the ingredients I used, each potion is about 441 calories.

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 4 servings

Ingredients
250g arborio rice
1L boiling water
2 Stock Knorr Vegetable Stock Pots
200g avocado
100g celery
1 tbsp thyme
1 onion
100g goat cheese
60g spinach

Method

Stir boiling water over the stock pots until dissolved, to make the vegetable stock.

Chop the onion and fry for five minutes.

Chop the celery and 100g avocado.

Add it to the frying pan, along with thyme and arborio rice, and fry for a further two minutes.

Gradually add the stock, allowing the juices to be absorbed before adding more.



Stir in half the spinach and half the cheese, and allow to simmer until reduced.

Puree the remaining avocado and stir in.

Scatter the remaining spinach and cheese over the top, and serve.
