Chocolate Filled French Toast Minis

A downright devilish brunch option, these have two of my favourite things, chocolate, and French toast. In a cute chocolate/ French toast sandwich. Yum.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 2 servings

About half a bread stick, or the amount to make 8-10 slices.
125g dark or milk chocolate (guilty - I used milk chocolate here).
2 eggs
1/2 cup milk
1/4 cup caster sugar
1 teaspoon vanilla extract
Butter, to grease the pan

Slice up the bread stick into 8-10 slices.

Melt the chocolate until smooth. Set this aside to cool and thicken slightly before spooning it onto the bread.

In a wide bowl, whisk together the eggs, milk, caster sugar, and vanilla.

Take half of the bread slices and spread each with a layer of chocolate.

Top each slice with another slice that hasn't been spread with chocolate.

Heat some butter in a frying pan over medium heat.

Carefully dunk each side of the chocolate sandwiches into the egg mixture, then pop them into the frying pan to cook.

Cook for 3-4 minutes, or until the bottom side becomes golden brown. Then flip each sandwich over to cook on the other side.

Plate up and serve immediately.
