Although I made twenty, these Scandi (or Scandinavian) Cookies did not last very long. They are only little morsels, so if you have a family that likes to dip their fingers in as soon as the biscuits are out the oven, then you might want to double up on the recipe or they'll disappear before they've even cooled. Based on the brands I used, each cookie is about 92 calories.

Preparation Time: 30 minutes
Cooking Time: 24 minutes
Makes: 20 servings

100g walnut halves
125g wholemeal flour
125g margarine
65g icing sugar
2 tsp vanilla extract

Toast the walnuts in an oven pre-heated to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.


Cream the margarine and icing sugar together.


Fold in the flour and walnuts.


Roll the cookie dough into twenty walnut shell size balls, and leave them to chill in the fridge for fifteen minutes.


Bake in the oven for seventeen minutes.
