Chicken Stir fried Noodles : Mauritian Style

Take the Chinese noodles, add the Mauritian touch and you have the Mauritian Stir Fried Noodles! Omit the chicken, you have the vegetarian version or swap it with fried prawns and you have the seafood version.

Preparation Time: 20 minutes
Cooking Time: 5 minutes
Makes: 5 servings

500 g fresh noodles
250 g chicken breast cut into cubes
1 cup grated carrots
1 cup grated cabbage
1 cup sliced mushroom
1 cup sliced green capsicum
1 cup cleaned beans sprouts
1 cup Chinese chives
3 tbsp oyster sauce
3 tbsp soya sauce
1 tsp finely sliced garlic
1 large omelette made with 2 eggs
Paprika powder

All ingredients ready

Marinate chicken in salt and pepper. Stir fry over high heat until done. Leave to cool aside.
In a large wok, heat 1 tbsp olive oil and add the garlic, followed by all the vegetables.
Give it a quick stir and add the noodles, chicken, oyster and soya sauce, sprinkle with paprika powder and ajinomoto. Stir well until all is mixed thoroughly.
Slice omelette and add to fried noodles.
Stir and serve hot with chutney.
