Mushroom & Leg Ham Risotto

Risotto is an Italian rice that is normally served on its own as starter. It can be meat-based, seafood-based or vegetable-based. Here may not be the most authentic, but it is just so easy and happy to create a great taste with our own-chosen favourite ingredients, and serve it as main course.



Preparation Time: 10 minutes
Cooking Time: 12-15 minutes
Makes: 2 servings

Ingredients
1 cup arborio rice
150g fresh tomatoes
150g leg ham
3 large flat mushrooms
2 cups chicken stock
3-4 garlic cloves
150g onion
2 tbsp extra-light olive oil
some fresh thyme leaves
some salad leaves



Method
Peel and finely dice garlic, peel and roughly dice onion, chop mushrooms and leg ham into roughly 1 cm pieces, chop tomatoes into cubes.



Heat 2 tbsp oil on a saucepan over medium-high heat. Add in diced garlic, diced onion, chopped tomatoes, mushrooms, leg ham and some fresh thyme leaves. Stir fry thoroughly.



Add in arborio rice (no need to wash the rice), stir to combine.



Pour in 1 cup of chicken stock to pan, stir slowly and bring to boil.



Change to medium-low heat, cover and simmer for 8-10 minutes or liquid is absorbed.



Pour in another cup of chicken stock.



Stir slowly and constantly until liquid is absorbed and the rice becomes transparent & tender. The rice may be too sticky if overcooked.



Normally garnish with some shaved parmesan cheese but sometimes I prefer using some salad leaves. Ready to serve.
