Quinoa and Cherry Tomato Salad

Quinoa is a delicious superfood that is high in protein and fiber. This recipe is very tasty and goes well as a meal by itself or as a side dish. Make a big batch and eat for lunch the next day.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 6 servings

2 cups white quinoa
3 button mushrooms
1 broccoli bunch
Punnet of cherry tomatoes
1 brown onion
1 clove fresh garlic
4 cups of reduced salt vegetable stock
200 g reduced fat Greek feta

Finely chop onion, mushrooms and garlic. Cook on a medium heated fry pan until brown.

Boil vegetable stock and add quinoa. Cook for 10 minutes or until the quiona looks fluffy. Drain and set aside.

Add chopped broccoli to fry pan and cook.

Chop tomatoes and feta.

Place quinoa, fry pan mixture, tomatoes and feta in a large salad bowl.

Serve and enjoy!
