Claire's Curried Pumpkin Soup

A scrumptious soup for a cold winter's night.

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 6 large servings

1 kg Kent pumpkin, peeled, seeded and cubed.
2 onions, diced
1 clove crushed garlic
2 tsp curry powder
1 tsp cumin powder
2 L vegetable or chicken stock
red lentils, to thicken if needed.


Saute the onion, garlic and pumpkin together until the onion is transparent.

Add spices.

Pour in stock (should cover other ingredients)

Bring to the boil, simmer until pumpkin is completely cooked and soft.

Puree soup with a stick blender or in batches with a food processor.

If soup is too thin for your liking at this point, return soup to pot and add 1/2 a cup of lentils, bring to the boil and puree again.
