One Pot Chorizo, Chicken and Tomato Paella

If you're lazy like me when it comes to doing the dishes, here's a great one pot recipe that doesn't require much cleaning up after. Plus, with its plump, tomatoey grains and flavourful chorizo and chicken bits, this hearty meal is bound to fill everyone's bellies.
The perfect one-pot paella!

Preparation Time: 15 minutes
Cooking Time: 35 minutes
Makes: 4 servings

2 chicken breasts, cut into bite-size chunks
2 chorizo sausages, sliced
2 cups medium-grain rice
1 x 400g can diced tomatoes
2 cups chicken stock
1 onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon paprika
2 cups baby spinach leaves
1 x 10g punnet fresh oregano leaves

In a large pot, heat the oil over high heat.
Add the onion and garlic and sauté for 1 minute.
Add the chorizo and paprika and cook for 5 minutes.

Add the chicken and sauté for about 5 minutes.
Add the tomatoes and mix well.

Add the rice and stir to combine.

Pour in the stock and reduce to low heat.

Cover the pot with a tight fitting lid and cook for 15 to 20 minutes, or until rice is cooked.
Turn off the stove and stir through the oregano and spinach before serving.
