Gluten Free Pumpkin Paratha

This recipe is dedicated to some readers who have been requesting a gluten free pumpkin paratha recipe. A few experiments later, I have come out with a recipe which is as soft as a paratha but with a completely different taste.

Preparation Time: 30 minutes
Cooking Time: 5 minutes
Makes: 10 servings

300g pumpkin cooked as shown here
1 cup chickpea flour
2 tbsp olive oil
1 egg
A little water
Pinch of salt
1 onion diced
1 bunch of fresh coriander chopped thinly

Add sliced onion, fresh coriander, olive oil and 1 egg to the cooked pumpkin.
Mix well and add water to obtain a thick batter.
Add salt to taste.

Heat your frying pan and grease it lightly.
Scoop a little batter and place onto the heated pan. With the help of the back of your spoon, gently work the batter to form a circle.

Fry over greased heated pan

When bubbles start forming, flip over and cook on the other side.
Remove from heat.

Ready to relish

Serve plain or with curry.
