Gooey Caramel and Peanut Slice

From the buttery shortbread base to the golden, peanut studded caramel and luscious dark chocolate, this gooey caramel and peanut slice makes for a decadent and indulgent treat.

Preparation Time: 10 minutes
Cooking Time: 25 minutes (plus 3 hours setting time)
Makes: 16 servings

75g caster sugar
150g unsalted butter, softened and cubed
200g self-raising flour
1 380g can caramel
90g salted peanuts, roughly chopped
130g dark chocolate


Preheat oven to 180 degrees or 160 fan forced.


Line a 20cm square tin with baking paper.

Sift flour into bowl and add cubed butter. Using your fingertips, rub butter and flour together until the mix resembles breadcrumbs. Add sugar and lightly stir to combine.

Press mixture into prepared tin, using the back of a spoon to achieve a smooth, even layer. Place in oven and bake for 20 minutes or until golden brown. Set aside to cool in the tin.

In the meantime, empty caramel into a microwave safe bowl and microwave for 30 seconds. Lightly whisk caramel until smooth.

Once the base has cooled, pour caramel over and spread evenly. Sprinkle the chopped peanuts over the caramel and lightly press.

Place the chocolate in a heatproof bowl over a pot of gently simmering water and melt, stirring occasionally. Allow chocolate to cool slightly then pour over the peanut studded caramel.

Leave slice aside to cool and set (avoid placing slice in the refrigerator as the chocolate will bloom) for at least 3 hours before slicing into squares.
