Okra in Indian style

Easy to make recipe with okra. It has subtle hint of Indian spices making it fragrant and yummy. Quick to prepare, goes best with roti.

Spicy okra

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 2-3 servings

2 cups okra slices
Half an onion, sliced
1 small tomato, chopped
1 tablespoon oil
Pinch of turmeric
Salt to taste
1 teaspoon each of paprika, cumin powder and coriander powder

In a pan, heat oil. Add onion and saute it well

Add the tomato and saute. Now add the okra. It is important to wash the okra before use and cut both the ends.

Add salt and all spices and combine.

Sprinkle few drops of water and keep mixing. Okra is a sticky vegetable and gives out strings. So keep stirring it continuously till the strings disappear.

Cover and cook for 2 minutes on low simmer

Serve with roti and enjoy this okra preparation
