This moist apple cake topped with toffee cream is a heavenly dessert that will impress your guests.

Preparation Time: 20 minutes
Cooking Time: 45 minutes
Makes: 10 servings

220 g butter
220 g castor sugar
4 large eggs
220 g self raising flour
1 tsp vanilla extract
3-4 large apples/pears

Ingredients for toffee
200 g castor sugar
25 ml water
50 ml double cream
Pinch of sea salt

Preheat oven at 180C and grease a round baking pan.
Slice apples thinly and cover the base of your pan with them.

Cover the base with thin slices of apples. You may substitute apples with pears as well

Cream butter and sugar.

Add eggs, beating well after each addition.

Add vanilla extract and fold in flour.

You can add walnuts,almonds, rest of apples chopped thinly or a pinch of cinnamon powder at this stage for a spicier and crunchier texture

Pour batter in baking pan and bake for 45 minutes or until the tip of your knife comes out clean when inserted.

Meanwhile prepare toffee sauce Stir sugar and water over saucepan on medium heat until sugar dissolves and caramelise. Add cream and pinch of salt. Mix well to obtain a rich toffee syrup.

When cake is done, retrieve from oven and place on a cooling rack.
Drizzle the sauce over the top of the cake and leave to cool.

The cake is best served warm and keep easily for a few days in the fridge.
