Almond Milk

After making the choice to switch to almond milk I decided to try make my own. It takes time but it's worth the wait.

Almond milk in a jar
Fresh made nut milk, I could drink it as is

Preparation Time: Overnight to soak the nuts
Cooking Time: 5 minutes
Makes: 1 litre

1 and 1/2 cups almonds soaked for 8 hours or overnight
3 and 1/2 cups of purified water
3 medjool dates or 2-3 teaspoons of raw honey
Pinch of himilayan salt
1 tsp vanilla extract (optional)

Drain nuts and place in a blender with dates or honey, vanilla and water. Make sure water is fresh don't reuse the water the nuts have been soaked in.
Blend on high speed then strain the mixture through a nut milk bag, cheesecloth or fine sieve into a measuring jug.
Use a sterilised glass bottle or jar and pour in the milk
Milk lasts in the fridge for up to four days.
Best tip is to write the date made on the jar with a permanent pen. Saves you from trying to remember when you made it.
Once milk has been made the left over almonds is called almond pulp you can bake it at 160 degrees Celsius for about an hour and a half and then process it to make almond flour.
