At Christmas time we always have a trifle, it's just not Christmas without it and trifle is a really simple dessert to make anyone can do it.

Preparation Time: 10-15 minutes
Cooking Time: Four hours for jelly to set
Makes: serves 6-8

1 large jam sponge roll
4 cups of vanilla pouring custard
600 ml thickened cream
1 packet of jelly or quick set jelly
1 teaspoon vanilla essence
1 teaspoon of honey
Fruit of your choice I like to use some canned pears or peaches, canned of fresh passionfruit and fresh bananas
Note kiwi fruit, fresh pineapple and pawpaw cannot be used if you are adding fruit to the jelly, as the jelly will not set.

Make jelly according to the packet instructions
Pour half into your serving bowl and half into another bowl to set
Add slices of banana to the jelly that is to be set in the serving bowl (optional)
Whip cream with vanilla until thick, do not over beat as it will curdle and turn into butter
When jelly is set, slice cake and place in up the sides of the serving bowl
Pour over 2 cups of custard
Spoon in rest of the jelly
Pour on the rest if the custard then cream
Top with your choice of fruit and place in the fridge until ready to serve
