Pretty Cupcakes

Here is a very simple way to have a delightful collection of cupcakes!

An extremely quick cake batter to whip up, because you are using spreadable rather than block butter.

Ice your cakes with pure rather than soft icing mixture, as the icing will set with a fondant look and give a nice glossy shine.

With the recent upsurge in cupcake baking, there are many lovely decorating items to choose from in local retailers. I chose sugared flowers for some sweetness and prettiness.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 12 servings

175g SR flour
pinch of salt
110g spreadable butter
110g caster sugar
2 eggs
1 tsp vanilla extract

150g pure icing sugar
cold water

Preheat your oven to 190 degrees celcius.
Line two 6 cup muffin pans with paper cases.
Sift the flour into mixing bowl.
Add all other ingredients and beat for 1 minute with electric beater.
Divide mixture between each muffin cases, about 1 tablespoon in each.
Bake for 20-25 minutes until golden brown on top and cooked through.
Remove cases from tins and cool cakes on a wire rack.
To make icing, mix icing sugar with enough cold water to get a spreading consistency.
Spread icing over cooled cakes.
Decorate with little sugared flowers.
