A simple seafood stew dish for the seafood lover. Fresh and juicy seafood simmered in rustic tomato stock. Serve with fresh crusty bread.

Makes: 4 servings
Ingredients
1 onion, diced
2 green capsicums, diced
3 cloves garlic, crushed
400g cans diced tomatoes
1 cup vegetable stock
1/2 cup dry white wine
2 dried bay leaves
1 teaspoon sugar
1kg mussels, scrubbed, beards removed
12 medium prawns, peeled, tail on
100g scallops
1 red chilli, chopped (optional)
Method
Heat oil in a large saucepan over medium-low heat. Add garlic, onion, capsicum and chili. Cook for 5 minutes, until soft.
Add tomatoes, sugar, vegetable stock, wine and bay leaves. Bring to the boil. Reduce heat to medium and simmer for 20 minutes.
Add seafood. Cover and cook for 3 minutes. Discard any unopened mussels.
