I was going to name this recipe 'Chocolate Mayonnaise Cupcakes' but I find people tend to look at me strangely - and also don't like the idea of using mayonnaise in sweet foods. Until I came across this recipe I felt the same way, but after trying it, I have to say I'm sold. This is an easy, delicious dairy free alternative.

It is also an extremely quick and easy recipe and handy if you don't have any eggs.

The recipe below is for the cakes without the chocolate on top - the chocolate I used does contain dairy, however dairy free chocolate could definitely be used. I simply melted the chocolate in the microwave and spooned it onto the cakes once they were cool.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 12 large cupcakes

1 cup water
1 cup mayonnaise
1tsp vanilla essence
2 cups self-raising flour
1 cup sugar
3tbs cocoa

Preheat oven to 180 degrees Celsius.
Place water, mayonnaise and vanilla essence in a bowl and stir with a fork until well combined.
Meanwhile in a separate bowl, combine all dry ingredients.

Using a hand or stand mixer, slowly add the mayonnaise mixture to the dry ingredients, beating until well combined.

Place mixture in patty pans and cook for 25 minutes or until a skewer inserted into the centre of a cake comes out clean.
Remove from oven and transfer to cooling rack.

If desired, sprinkle with cocoa, icing sugar or spread melted chocolate onto each cake.
