Dairy Free Chocolate Cupcakes

I was going to name this recipe 'Chocolate Mayonnaise Cupcakes' but I find people tend to look at me strangely - and also don't like the idea of using mayonnaise in sweet foods. Until I came across this recipe I felt the same way, but after trying it, I have to say I'm sold. This is an easy, delicious dairy free alternative.
It is also an extremely quick and easy recipe and handy if you don't have any eggs.
The recipe below is for the cakes without the chocolate on top - the chocolate I used does contain dairy, however dairy free chocolate could definitely be used. I simply melted the chocolate in the microwave and spooned it onto the cakes once they were cool.

1 cup water
1 cup mayonnaise
1tsp vanilla essence
2 cups self-raising flour
1 cup sugar
