Delicious salad, suitable for any occassion either as an accompaniment or a light entree.
Spinach Tomato & Feta Salad

: 5 minutes
: 4 servings
1 tablespoon extra-virgin olive oil
500g spinach, stemmed, washed, torn and drained
Salt & freshly ground pepper
3 Tomatoes, chopped
1 Red Onion, sliced
200g Marinated feta cheese, crumbled
Extra olive oil
Heat oil in a large pan over medium-high heat. Add spinach, in batches if necessary, and toss until just wilted, about 2 minutes. Season with salt and pepper to taste.
Assemble salad by placing tomatoes and onions on a large platter, spoon over wilted spinach and marinated feta cheese.
Drizzle salad with extra olive oil and season to taste.
