Caldo Verde is a rustic Portuguese green broth soup which is traditionally prepared with cabbage.

80g chorizo sausage
2 cloves of garlic
180g green cabbage
Peel and cube the potatoes. Cut the chorizo sausage into small pieces. Peel and de-germ the garlic cloves. Wash the cabbage and remove the large ribs from the leaves. Cut the leaves into strips.
Place the potatoes, cabbage, chorizo sausage, garlic and 800ml water into a stockpot. Add a little salt.
Bring to the boil, turn the heat down and cook for 35 minutes.
Use a stick blender or pour into a blender and blend until desired texture. Serve warm with crusty bread.
