Cream of Sweet Potatoes

The swamps in Louisiana are called bayous. For centuries, the inhabitants of this region have had very different culinary traditions from the rest of the United States. This colourful and spicy cream soup is a perfect illustration.



Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
2 medium size sweet potatoes
2 small brown onions
3 cloves of garlic
1/2 tsp cayenne pepper
1 tsp cumin
750ml vegetable stock
salt, to taste
crusty bread roll, to serve

Method
Peel the sweet potatoes and onions, then cut them into small cubes.

Peel the cloves of garlic and crush them with the palm of your hand.

Peel the brown onions and cut them in half.

Place the sweet potatoes, onions, garlic, cayenne pepper, cumin and stock into a stockpot. Bring to the boil then turn the heat down and cook for 25 minutes until the sweet potatoes are cooked.

Transfer into a blender and blend until smooth.

Season with salt and divide among bowls. Serve with crusty bread roll.
