A delicious way to use eggs and make a light meal or a starter without meat. Cooking a frittata is nowhere near as fast as a simple omelette so you will have to be patient when preparing this version with potatoes and onions. Frittate can be served hot, warm or at room temperature. I have even eaten them as sandwich fillings in Italy and they make perfect picnic food too.
: 20-30 minutes
: 5 minutes (alternatively you can cook the frittata in the oven for 15 minutes at 180°C)
: 4-6 servings
500g waxy potatoes
115g finely sliced onions
Salt and freshly ground black pepper
And serve sliced into wedges.
