Simple to prepare and absolutely delicious soup. Ideal as a light meal or an entree. Guaranteed to make your kids eat vegetables.
Creamy Potato and Leek Soup

: 4 servings
1 Leek, sliced
4 Potatoes, peeled and cut
1 Litre chicken stock
2 Teaspoons butter
1/2 Cup cream
Salt and pepper
In a medium saucepan, saute the leek in butter for 5-10 minutes or until tender.
Add potatoes and chicken stock to pot and cook on medium heat until potatoes are soft - approx 15 minutes.
Using stick blender, puree the vegetables until smooth.
Add cream and stir. Season with salt and pepper.
Serve with fresh bread
