These simple patties are a delicious way to serve sweet potato (kumera) and vegetarians will especially love them. I served them with a lemon/yogurt dressing and a fresh
Asian inspired side salad. These would also make a great vegetarian addition to any barbecue or outdoor picnic.

A stack of golden patties
Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 4 servings
Ingredients
4 sweet potatoes
1 tablespoon butter
1 egg
1/2 cup flour
1 chopped, fried onion
1/2 cup chopped parsley (optional)
salt/pepper to taste

Sweet potatoes ready to steam
Method
Cut the sweet potatoes into chunks and steam for fifteen minutes.

Mash the potatoes
Mash the sweet potatoes, adding the butter, salt and pepper.

Fry the patties in a pan
Add the egg, flour and fried onion, then form the mixture into balls.

Serve them plain
Fry the individual patties in butter for about four minutes each side, or until golden on the outside.
Serve the patties hot or cold with yogurt dressing (mix together 1 tablespoon lemon juice, 1/2 cup yogurt, 1 tablespoon olive oil, fresh mint leaves). Enjoy.
