Whole Mandarin Cupcakes

Mandarin cupcakes make for a lovely citrus snack. Perfect for the lunch boxes.

Preparation Time: 60 minutes
Cooking Time: 20 minutes
Makes: 12 servings

2 mandarins
1 tbs lemon juice
125g butter
1.5 cups S.R flour
1 cup of sugar
2 tbs honey
1 tsp vanilla essence
1 egg
pinch of salt
maple syrup or cream for serving

Boil the mandarins in a pot of water for 45-50 mins.
Remove from the water and blend in a blender until the fruit is a thick paste.

Allow the mix to cool to avoid cooking your egg.
To the bowl add the flour, sugar, lemon juice, honey, egg, vanilla essence and salt.
Mix well until all ingredients are combined.

In a muffin tray, grease the moulds and cut small strips of baking paper for easy removal.
Spoon the mixture into the moulds.

Bake the cupcakes at 180-200 degrees.
Remove from the oven and drizzle with maple syrup.
