Bacon & Basil Potato Hash

A simple yet delicious recipe for a big breakfast at home. This bacon and basil potato hash recipe is great for when you are sick and tired of having the same boring toast or porridge in the morning. They are easy to make and definitely something that can start your day off with a kick.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 6-8 servings

500g potatoes, diced
1 red onion, finely chopped
100g shortcut bacon rashers, finely chopped
1 cup grated tasty cheese
1 egg, lightly beaten
2 tbsp basil, finely chopped
1/2 cup dried breadcrumbs
olive oil for cooking
salt & pepper for seasoning

Peel and dice potatoes.

Place the potatoes in a large saucepan filled with cold water over medium-high heat.

Bring to the boil, cooking for 15 minutes.

Meanwhile, prepare the onions, bacon and basil.

Heat oil in a fry pan over medium heat.

Add the onions, cook for 2 minutes.

Add the bacon and cook for a further 3 minutes or until tender.

Drain the potatoes and transfer onto a large plate.

Using a potato masher, mash the potatoes.

Add the onions, bacon, cheese, basil and egg with the potatoes.

Season with salt and pepper.

Using a large metal spoon, combine all the ingredients.

In another large plate, spread the dried breadcrumbs.

Using your hands mold the potato mixtures into oval patties.

Lightly coat the patties in the breadcrumb mixture.

Heat oil in a frying pan over medium-high heat.

Place patties in the frying pan and cook each side for 2-3 minutes.

Turn and cook the other side for another 2 minutes.

Place on a paper towel to soak excess oil.

Serve warm with mayonnaise, tomato or your preferred sauce.
