Vegan Chocolate and Blueberry Pancakes

Don't let the word Vegan put you off! These pancakes are absalutely delicious! They taste just like regular pancakes yet lighter! Have as a yummy start to the day or an after dinner treat!

Preparation Time: 5 minutes
Cooking Time: 3 minutes
Makes: 4 Large pancakes

Ingredients

1 ¼ cups all purpose flour
2 tablespoons of caster sugar
2 teaspoons baking powder
½ teaspoon salt
1 ¼ cups water
Spray Canola Oil
¼ cup cocoa powder
1 cup of blueberries (halves)

Method
Place dry ingredients (excluding blueberries) in a bowl together and mix.
Once mixed add the wet ingredients and whisk well.
Once completely mixed add the blueberries and gentle stir. Do not over mix after adding blueberries.
Heat frying pan to a medium heat using the spray canola oil.
Once heated add the pancake mix as much as desired for size.
Turn pancake after 2-3minutes or until golden brown.

These pancakes go beautifully with icing drizzle over the top when hot or soy ice-cream. The blueberries can be swapped for other berries, chocolate chips etc.
