Nasi Goreng (Indonesian Fried Rice)

Nasi Goreng or Indonesian Fried Rice is a popular dish that you can find in Asian restaurant. It is a plate of fragrant stir-fried rice with chicken, prawns and omelette strips, and served alongside with refreshing cucumber pickles.



Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

Ingredients
2 eggs
3 garlic cloves
1 onion
2 red chillies
1 tsp dried shrimp paste
1 tsp coriander seeds
1/2 tsp sugar
1 chicken breast fillet, thinly sliced
200g peeled raw prawns
3 cups cold cooked rice
2 tsp kecap manis
1 tbsp soy sauce
4 spring onions, finely chopped
3 tbsp fried shallots, to serve

Acar (Pickled Cucumber)
200g fresh cucumber, quartered, deseeded, diced
1 red chilli, finely chopped
1 red shallot, peeled, thinly sliced
200ml warm water
4 tbsp sugar
2 tsp white vinegar
1 tsp salt

Method
First, prepare the acar. In a bowl, mix the sugar, salt, vinegar and water until the sugar and salt have dissolved. Add in the diced cucumber, chopped chilli and sliced shallot. Cover and keep in the fridge until needed.



Beat the eggs with a pinch of salt until foamy. Heat a frying pan and lightly brush with 1 tbsp of oil. Pour about one-quarter of the egg into the pan and cook for 1-2 minutes until the omelette sets. Flip and cook for 30 seconds. Remove from the pan and repeat with the remaining egg.



When the omelettes are cold, gently roll up and shred finely.



Mix the cold cooked rice with the kecap manis and soy sauce until the rice are well coated.



Process the garlic, onion, chilli, shrimp paste, coriander and sugar in a food processor until a paste forms.

Heat a pan over high heat, add 1 tbsp of oil and fry the paste for 1 minute, or until fragrant.



Add the chicken and prawns and stir-fry until they change colour.



Add 2 tbsp of oil and the rice. Stir-fry, breaking up any lumps, until the rice is heated through. Add the spring onions and stir-fry for another minute.



Serve immediately with acar and garnished with the omelette strips and fried shallots.
