Simple Passionfruit Slices

Passionfruit is one of my favourite fruits for its tangy flavour. Although it is a summer fruit, it can make a good winter dessert when used in baking. This recipe combines the sweetness of condensed milk with the tanginess of passionfruit and lemons to give you delicious slices.

Preparation Time: 10 minutes
Cooking Time: 30 minutes 10 minutes resting
Makes: 6-8 servings

150g butter
1/3 cup caster sugar
1 tsp vanilla essence
1 egg
1 cup plain flour
1/4 cup self-raising flour
2 tbsp milk
395g can sweetened condensed milk
1/2 cup lemon juice
1/4 cup passionfruit pulp

Preheat oven to 180C and line a square or rectangular slice pan.
In a large bowl beat together butter, sugar and vanilla until pale and creamy.
Add in the egg.
Beat until well combined and smooth.

In another bowl sift the flours together.
Using a spatula fold together the egg mixture and flours.
Add in the milk and combine well.

Spoon into the prepared pan and bake for 15 minutes.
Remove the pan from the oven and set aside. (This will form the base of the slice)
Whisk together the condensed milk and lemon juice.

Add the passionfruit pulp and stir to combine.

Pour the passionfruit mixture over the base.

Bake for a further 15 minutes.
Remove from the oven and allow it to rest for 10 minutes to set.
