Firm Tofu with Green Bell Pepper

This is one of the easiest and most ubiquitous of Chinese dishes. Sizzling some slices of garlic and ginger in the hot oil before you add the tofu brings out a more complex flavour in this dish.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings

125g spiced firm tofu
1 green bell pepper
2 tbsp cooking oil
2 cloves garlic, chopped
1 thumb-size piece ginger, chopped
a little soy sauce

Cut the tofu evenly into bite-sized strips. Discard the pepper stem, membranes and seeds and cut into strips to match the tofu.

Heat a frying pan over a high flame. Add the pepper and dry-fry until nearly cooked. Set aside.

Add oil to the pan, swirl it around, fry the garlic and ginger until fragrant. Add the tofu. Stir-fry until hot and tinged with gold.

Add the peppers. Stir-fry briefly to reheat the peppers, season with soy sauce and salt to taste.
