Asparagus and Mustard Pastries - quick, easy and delicious.

: 16 Asparagus Pastries
1 Bunch Asparagus (16 Spears)
2 Tablespoons Whole Grain Mustard
2 Tablespoons Grated Cheddar Cheese
2 Filo Pastry Sheets (Slightly Thawed)
1 Teaspoon Extra Virgin Olive Oil
1 Egg (Slightly Beaten)
1 Teaspoon Poppy Seeds
Trim the ends of the asparagus and blanch in salted boiling water.
Coat the blanched asparagus with a little Extra Virgin Olive Oil.
Cut each filo pastry sheet into 4 squares and again into triangles, then spread the surface of each triangle with whole grain mustard.
Add grated cheddar cheese on top of each filo triangle.
Roll each filo pastry enclosing the asparagus, then brush the tops and sides with egg and sprinkle with poppy seeds.
Bake the Asparagus and Mustard Pastries for 15 minutes or until crisp and golden brown in colour.
