Ayam Goreng Kalasan is an Indonedian Fried Chicken marinated with sweet soy, tamarind & turmeric. It is cook on low heat until tender, then grilled until golden and crispy. Serve along with salad, rice and chilli dips.

Preparation Time: 30 minutes
Cooking Time: 70 minutes
Makes: 4 servings

8 chicken pieces
half a cucumber, to serve
1/4 cabbage, to serve
steamed jasmine rice, to serve
sambal oelek, to serve
kecap manis, to serve

Kalasan Marinade
2 tbsp garlic powder
1 tbsp ground coriander
1 tbsp turmeric
1 tbsp kecap manis
1 tbsp tamarind paste
1 tsp salt
1 tsp sugar

In a bowl, mix all the marinade ingredients, add in the chicken pieces and coat well. Refrigerate for 30 minutes.

Transfer the marinated chicken to a pan. Pour in 250ml water, cook on low heat for 30 minutes. Uncovered and continue cooking until the water has completely evaporates, for a further 30 minutes more.

Meanwhile, prepare the salad. Wash and thinly slice the cucumber in an angle. Wash and peel the cabbage. Set aside.

Preheat the oven to 200C. Place the cooked chicken on a baking tray, roast the chicken for 10 minutes until golden and crispy.

Arrange a few slices of cucumber and cabbage on a plate, together with the chicken. Serve with steamed jasmine rice, sambal oelek and kecap manis.
