1 Small Zucchini
1/2 Cup Kalamata Olives
1 Teaspoon Lemon Zest
Juice of 1 Lemon
1/2 Cup Shredded Basil
Thinly slice the zucchini into rounds and blanch in salted boiling water for a minute.
Remove the Zucchini, drain and refresh the Zucchini under cold running water.
